Easy 3 Onion Spinach Dip
Oh the spinach dip at parties has been a classic for decades. It is easy to make and everyone loves it, but this one is definitely an elevated version of the classic made with onion soup mix in a hollowed out bread roll. The flavors are just perfect and my recent party guests are all in agreement. What makes this special is the spice mix that my niece sent to me. It is a higher level far above the classic soup mix. First of all, it is very potent. You only need a little to make a lot of flavor. The next thing that makes this special, is that it is 100 percent plant -based. More and more people are trying vegan as well as going gluten free, so this is something everyone can eat at your next event.
Recipe:
16 ounce jar of vegan mayonnaise
8 ounce container of Tofutti cream cheese (must use this brand for excellent taste)
16 ounces of drained and thawed frozen spinach
2.-3 tablespoons of Epicure 3 Onion Dip Mix
2 carrots finely shredded
2 peppers finely chopped ( I used orange and red sweet peppers)
Thaw frozen spinach overnight in your refrigerator. Thoroughly squeeze out all excess water in a tea towel or your hands. Set aside. In a large bowl add all the mayo and cream cheese and mix with a hand mixer. Add in spinach and 3 Onion Dip Mix. Use mixer to blend. Add carrots and peppers. Blend. Dress with rainbow carrots and gluten -free crackers. I used beet and corn crackers. Enjoy!
