Roasted Cauliflower
This roasted purple cauliflower is magnificent enough to take center stage at the table ! It is a different way of thinking about food. Eat the rainbow to nourish yourself.
Ingredients
whole cauliflower any variety but I used purple for this photo
salt to taste
1/4 c olive oil
2 T curry spice mix
Preparation
Preheat oven to 390 degrees °F Brush a cast-iron skillet, or other oven-proof dish with olive oil. Remove the green outer leaves from cauliflower. Level the stem so that cauliflower stands up. Bring a large pot of water to boil and cook cauliflower for 10-15 minutes depending on how large your cauliflower is. Pat it dry.
Cut a criss cross shape top middle to allow center to cook evenly. Spread oil, spice salt mixture all over the cauliflower with your hands. Roast cauliflower in the oven for 45 -60 minutes or until it can be pierced with a fork in middle. Increase oven temperature to 435 °F and bake cauliflower for an additional 5-10 minutes, until small brown spots start to appear and the florettes on the surface become buttery tender and slightly caramelized.
